You pay with Google and Apple Pay on your mobile phone, which means you can only pay if your smartphone is unlocked. This can be with your access code, fingerprint or by facial recognition. You could think of these as your PIN when paying. If the payment terminal asks you to enter a PIN code, then something has gone wrong with the payment terminal itself.
